As promised, this month it’s all about the beautiful September vegetables, both in my garden and at the local farmer’s market! We have had a bumper crop of eggplant this year and I could not be happier! We grew 3 varieties this year and I freeze it as well as can it for a variety of different recipes. I have a lot of information to share with you so I have videotaped all my eggplant tips for you!
